Caciocavallo podolico

Caciocavallo podolico is the symbol of southern Italy's cheese-making tradition. It is produced exclusively with milk from the podolica breed of cattle. The characteristic of the milk is given by the feeding of the cows: free pastures, wild herbs and Mediterranean scrub. It is rich and perfect for raw milk processing because it keeps all the flavours intact and transfers them to the finished product.
When eaten fresh, the flavour is extraordinarily strong and savoury. As it matures, more aromatic scents develop, reminiscent of wild plants, and it is enriched with spicy nuances.
