Caciofiore di Columella Presidio Slow Food
A cheese maker from the countryside outside Rome decided to put back in production this cheese which was very famous at the time. This cheese is very unique due to the fact that it is made using vegetable rennet which is obtained from flower petals (Cynara Cardunculus). This cheese has a deep flavor of milk sweet and not salty with a bit of bitter flavour at the end.
